If you still cannot find inspiration for today’s dinner, we have prepared a recipe for a homemade humus, avocado and cucumber vegan sandwich which we are sure you will love! The trick though is that you can only prepare this sandwich if you have previously made our pea and rocket humus spread. So for this recipe, you will need to read our previous post, prepare the pea and rocket humus, spread it on a slice of bread and add the ingredients we suggest bellow.
This is so simple and quick and the best part is that you can store the humus in a glass jar in the fridge for up to 5 days. There you have a dinner idea for the whole week!
– 2 pieces whole-wheat bread
– 2 tbsp. pea and rocket humus
– 1 cucumber
– 1/2 avocado
– 1 handful rocket argula ICEBERG SALAT CENTAR
– pinch of black sesame seeds (for decoration)
1. Spread the pea and rocket humus on a piece of bread.
2. Add sliced avocado and cucumber on top.
3. Sprinkle with black sesame seeds and serve with rocket salad on the side.
